Blue Guacamole

Oh, hello blog readers, remember me? Cara, the voice of this blog? I am out of housewife mode and am assuming the nurse role for my dad these next couple weeks, who by the way, is out of the hospital--yep, you read that right. Out. Of. The. Hospital. Since Friday. 

What's that you say? You thought he was supposed to stay in there ten days? Oh yeah, so did we. You're witnessing the power of prayer right here people. Pretty amazing stuff going on in the recovery process of that man. 

He even went to church on Sunday, just two days after being released from the hospital, and spoke a few words. Words none of us expected he would be able to say for months.  

It was an amazing moment for our family for sure and one we will cherish forever.

You can check out my Mom's daily recap over at my Dad's blog for the play by play of this last week. It really is amazing how God is healing him, and how He is already beginning to use Dad to bless and encourage others through this process. 

Being out of my routine though, I'm sort of in the awkward stage of blogging at the moment, as in, I got nothing for ya'! haha Okay, that's not true, but it is sort of different thinking of what to write about my German life when I'm not, well, living my German life.

I do have some things coming your way, but in the meantime, enjoy this delicious and super easy snack I made the other day. 

Blue Cheese Guacamole. Don't doubt. Just try it. You'll be pleasantly surprised. When I first made it, I thought "What the heck am I doing? Why am I making so much of this???" But then we had visitors stop by to see Dad and by the time they left it was gone. 

It was that good. 

Even my Blue Cheese hating father thought it was pretty tasty. Although, that may have been slightly influenced by his desperation for anything other than soup and smoothies. 

Poor guy is struggling with his liquid diet. Pray he can have a pizza or a pack of tacos soon!

Oh yeah, we're talking about guac, sorry. Serve it up at your Super Bowl party. Or playoff party. Or just make it right now. Yeah, do that.

Blue Cheese Guacamole
Adapted from Cooking Light Jan/Feb 2012 Magazine

3 tablespoons finely chopped Onion
1 tablespoon minced fresh Jalapeno or Serrano Chile (optional)
1 teaspoon Coarse Grained Salt
1 tablespoon freshly squeezed Lemon or Lime Juice (the recipe called for lime, but I only had a lemon so I used that and it worked great)
4 small or 2 large Haas Avocados
4 tablespoons Crumbled Blue Cheese, plus extra to sprinkle on top

Mash the minced onion and chile and salt together on a cutting board using a fork to form sort of a paste. Transfer the paste to a bowl and stir in the juice. 

Cut the avocados in half and score the flesh in the avocado halves in a crosshatch pattern with a knife and scoop it with a spoon into the bowl. Confused? It's easier than it sounds. Check out this great tutorial from Our Best Bites for the step-by-step instructions and pics.

Add the blue cheese and gently mash all ingredients thoroughly together until smooth but still slightly chunky. Garnish with remaining blue cheese and serve with tortilla chips or for a healthier option, whole wheat Pita chips. Yum! 

Note: The recipe called for 1/4 cup chopped Cilantro. I omitted this because, sadly my mother does not like cilantro. (???) But, if I were to make this for myself, I would definitely add it in, and if you're a cilantro lover, you should add it in too. :)
