And on my way I was, until, after finishing up my Muddy Buddies, I was struck with inspiration, and thus this was born:
White Chocolate Coconut Muddy Buddies. I almost--dare I say it--like these better than the original! The peanut butter flavor stands out so much more with the white chocolate than with the chocolate.
And the coconut complements the two well. Although, if you're not a fan of coconut you can totally leave it off and not miss out on anything.
Now. Your thighs will NOT thank you, but your taste buds most certainly will.
White Chocolate Coconut Muddy Buddies
4 cups Chex Cereal (Shreddies in Germany)
4 cups Honey Nut Chex Cereal
1 cup White Chocolate Chips
1/2 cup Smooth Peanut Butter
1/4 cup Butter
1 teaspoon Vanilla
1 1/2 cup Powdered Sugar
1/2 cup (or more to taste) Dried Shredded Coconut (Kokosraspel)
In a double boiler, over medium heat, melt white chocolate, butter and peanut butter, stirring occasionally until smooth. Remove from heat and stir in the vanilla. Pour cereal into a large bowl, preferably one with a lid.
Pour chocolate mixture over cereal and stir well to coat all pieces. If your bowl has a lid, simply add the powdered sugar and shake away until evenly coated. If your bowl does not have a lid, transfer the chocolate-coated cereal to a Ziploc bag. Add coconut and powdered sugar, seal and shake until coated well.
Perfect to set out at parties or just to snack on every time you walk into the kitchen.
