Toasty Yummy Granola
4 cups plain ol' oats
1/2 cup shredded coconut
1 tsp ground cinnamon
3 TBS butter
1/4 cup coconut oil
1/4 cup honey
1/2 cup brown sugar
2 tsp pure vanilla extract
In a large bowl, combine oats, coconut and cinnamon.
In a saucepan, melt butter, oil, honey and sugar until oil has melted and the sugar has dissolved. Bring it to boiling, whisking well so that everything is mixed together. Remove from heat. Add vanilla.
Pour the butter mixture over the oat mixture. Stir well, making sure that the oats are thoroughly coated with the butter and sugar mixture.
Line a baking sheet with parchment paper (backpapier if you're in Germany) and bake at 325〫F (162〫C) for 10 minutes. Remove the pan from the oven and toss the oats. Return granola back to the oven for another 10 minutes. Remove pan again, toss oats, and put it back in the oven for another 5-10 minutes, or until oats turn slightly brown. Let cool. Enjoy this tasty treat for up to two weeks.
I like to eat mine sprinkled over a little yogurt. Add in a few of these not so little blueberries or strawberries and you got yourself a great little breakfast or snack.
My favorite way to eat them though is in a mock apple pie sort of way. Fill a small dish with apple sauce. Warm it in the microwave for 10-15 seconds. Sprinkle with cinnamon and sugar and top with a generous scoop of granola.
Or, if you don't have apple sauce on hand, slice up an apple and heat it in the microwave for 30 seconds or until warm and soft. Drizzle slices with honey and sprinkle them with cinnamon. (Brown sugar is also yummy) Top it all off with your tasty granola and you have yourself a delicious little treat with very little work and very few calories. Every woman's dream.
