In a little over 24 hours we will be basking in the sun of beautiful Puerto Rico! Well, technically it's a little more than 24 hours since we land at night, but you get the idea. Yesterday it snowed the ENTIRE day so we are definitely ready for some warmer weather.
Beautiful, giant snowflakes fell non-stop from about 9:00 to 6:00. I am always amazed how much snow those puffy clouds can hold that it can snow for 9 hours. That's as long as my Mom's work day. Or as long as my husband will most likely sleep today since he didn't get back from his game till 7:00 in the AM. Driving on a bus from Berlin to Karlsruhe + icy, snowy Autobahns = looooong trip. He was getting home just as I was waking up and has been sleeping since. Maybe this will help him get ready for the time change we will soon undergo...hmmm.
What's even more amazing is that it snowed for 9 hours straight and then, as if by the snap of God's fingers, it was done. Just like that. It didn't lighten up and gradually come to an end. It just stopped. Done. Finito. Fertig. No more.
While our lovely little white fluffy blanket is quite beautiful, it is threatening to make our travel plans a bit ugly. Frankfurt likes to close their airport on a regular basis in the winter and proceeded to do so again last night. It reopened this morning and the cool Accuweather pics show rain until Thursday so hopefully we can seize our window of opportunity and fly out tomorrow. Pray, pray, pray! Especially cause US Airways likes us so much they upgraded us to die Erste Klasse on our connection from Charlotte to San Juan. Woo! We don't want them to waste their generosity! :)
Alright, enough rambling, back to packing *slash* motivating myself to go to the gym (since I know between my sweet Mommmy-in-Law, Awesome Mommy, Great Chef Sister and Super Nana Banana combined with the fact that I want to eat everything when I'm in America that I'll drastically change my proportion of eating to working out to pretty much just eating) *slash* finding ways to not waste things in my fridge before we go.
Here was my attempt to salvage mushy apples, fresh cranberries, leftover crumble topping, and buttermilk. It smells delish...
Notice the lovely thumb print in the bottom right hand corner. Just my attempt to add my own "touch"...pun absolutely intended. What can I say it runs in the family, right Papa Swan?
Can't wait to try it out! I adapted the recipe from this awesome blog I discovered this morning in my search for a recipe that matched what I had on hand. It called for pear puree but since I was needing to get rid of apples, I used those instead. I also substituted cinnamon for all spice, because, well, I just don't have any all spice.
Now, time to try a slice before I wrap it up to take with us for a little snacky snack on the plane. Ciao ciao!
